A hearty, comforting breakfast that combines crispy tater tots, creamy sausage gravy, and perfectly cooked eggs. This dish is perfect for lazy weekend mornings, brunch with friends, or anytime you crave a rich, satisfying meal.

Ingredients (Serves 4)

For the Tater Tot Bowl:

  • 4 cups frozen tater tots
  • 4 large eggs
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped green onions (optional, for garnish)

For the Sausage Gravy:

  • ½ pound breakfast sausage
  • 2 tablespoons all-purpose flour
  • 1½ cups whole milk
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

Step 1: Cook the Tater Tots

  1. Preheat your oven according to the instructions on the tater tot package. Usually, 425°F (220°C) works well.
  2. Spread the frozen tater tots in a single layer on a baking sheet.
  3. Bake for 20–25 minutes, flipping halfway through, until golden brown and crispy.
  4. Remove from the oven and transfer to a serving dish or keep warm in the oven while preparing the gravy.

Step 2: Make the Sausage Gravy

  1. In a large skillet over medium heat, cook the breakfast sausage.
  2. Use a spatula to break the sausage into small pieces as it cooks. Continue until browned and fully cooked.
  3. Sprinkle the flour evenly over the cooked sausage and stir well. Cook for 1–2 minutes, letting the flour absorb the fat and form a roux.
  4. Gradually add the milk, stirring constantly to prevent lumps.
  5. Bring the mixture to a gentle simmer, letting it thicken, about 3–5 minutes.
  6. Season with salt and black pepper to taste. Remove from heat and set aside.

Step 3: Cook the Eggs

  1. In a separate skillet, cook the eggs to your preference: scrambled, fried, or poached.
  2. For scrambled eggs, whisk the eggs in a bowl, season lightly with salt and pepper, and cook over medium-low heat, stirring gently until just set.

Step 4: Assemble the Breakfast Bowl

  1. Place a generous layer of crispy tater tots at the bottom of each serving bowl.
  2. Spoon the sausage gravy over the tater tots.
  3. Top with cooked eggs.
  4. Sprinkle with shredded cheddar cheese and chopped green onions for added flavor and color.

Step 5: Serve

Serve immediately while warm. Optional accompaniments include:

  • Hot sauce for a little kick
  • Fresh fruit on the side to balance the richness
  • A warm biscuit for an extra indulgent meal

Tips for Perfect Tater Tot Breakfast Bowls

  • Crispier tots: Bake slightly longer or broil for 1–2 minutes at the end for extra crunch.
  • Creamier gravy: Use whole milk, and for an ultra-rich version, substitute half the milk with heavy cream.
  • Extra flavor: Add a pinch of smoked paprika or cayenne to the gravy.

Storage & Reheating

  • Store leftovers in an airtight container in the fridge for up to 2 days.
  • Reheat in the microwave, adding a splash of milk to loosen the gravy if needed.
