Chicken Parmesan
Ingredients
For the Chicken:
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (Panko or Italian-style)
1/2 cup grated Parmesan cheese
1 tsp garlic powder
1 tsp dried oregano
Salt and freshly ground black pepper to taste
1/4 cup olive oil (for frying)
For the Topping:
2 cups marinara sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil leaves (for garnish)
Instructions
Prepare the Chicken:
Preheat your oven to 375°F (190°C).
Pound the chicken breasts to an even thickness (about 1/2 inch).
Season both sides with salt and pepper.
Set Up Breading Stations:
Place the flour in a shallow dish.
Beat the eggs in a separate shallow dish.
Combine breadcrumbs, Parmesan cheese, garlic powder, oregano, salt, and pepper in a third shallow dish.
Bread the Chicken:
Dredge each chicken breast in flour, then dip into the beaten eggs, and coat thoroughly with the breadcrumb mixture.
Fry the Chicken:
Heat olive oil in a large skillet over medium heat.
Fry the breaded chicken breasts for 2-3 minutes per side until golden brown. Transfer to a baking dish.
Assemble the Chicken Parmesan:
Spoon marinara sauce over each chicken breast.
Top with shredded mozzarella and sprinkle with Parmesan cheese.
Bake:
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly and the chicken is cooked through.
Serve:
Garnish with fresh basil leaves and serve warm, paired with spaghetti or a side salad.
