Cajun Cabbage Jambalaya

Smoky. Spicy. Southern Comfort in a Bowl.

This Cajun Cabbage Jambalaya is a down-home Southern classic that’s loaded with bold flavor, hearty ingredients, and just the right kick of Cajun spice. Instead of traditional rice, this version swaps in tender cabbage for a low-carb, veggie-packed twist — but it’s every bit as comforting and satisfying.

With smoky sausage, sautéed onions and bell peppers, and a rich tomato base, it’s a dish that fills your kitchen with the irresistible aroma of Louisiana cooking. Whether you serve it as a main course or alongside cornbread or rice, this hearty skillet meal is sure to become a family favorite.

Ingredients

Main Ingredients

  • 225 grams smoked pork sausage, sliced into 1 cm rounds (andouille sausage for authentic flavor)
  • 1 white onion, finely chopped
  • 1 green bell pepper, diced
  • 2 celery stalks, diced (optional but traditional in Cajun cooking)
  • 3 garlic cloves, minced
  • ½ medium head of cabbage, chopped (about 4–5 cups)
  • 1 can (400 g) diced tomatoes, undrained
  • 1 tablespoon tomato paste (optional, for richness)
  • 1 cup chicken broth (add more if needed for simmering)
  • 2 tablespoons olive oil or butter

Seasonings

  • 1 tablespoon Cajun seasoning (store-bought or homemade)
  • ½ teaspoon smoked paprika
  • ¼ teaspoon crushed red pepper flakes (optional, for extra heat)
  • Salt and black pepper, to taste
  • 1 teaspoon Worcestershire sauce (adds depth and umami)

Optional Garnishes

  • Fresh parsley or green onions, chopped
  • A squeeze of fresh lemon juice before serving
  • A dash of hot sauce, like Tabasco or Crystal

Instructions

Step 1: Brown the Sausage

  1. Heat 1 tablespoon olive oil in a large skillet or Dutch oven over medium-high heat.
  2. Add the smoked sausage slices and cook for 4–5 minutes, until golden brown and slightly crisp around the edges.
  3. Remove the sausage with a slotted spoon and set aside — leave the flavorful drippings in the pan.
  4. Tip: Browning the sausage builds flavor and creates a smoky base for the entire dish.

Step 2: Sauté the Aromatics

  1. In the same skillet, add a bit more oil if needed.
  2. Toss in the onion, bell pepper, and celery. Sauté for 4–5 minutes, until softened and fragrant.
  3. Add the garlic and cook for another 30 seconds, just until aromatic.

Step 3: Add Cabbage and Spices

  1. Stir in the chopped cabbage and cook for 5 minutes, allowing it to wilt slightly.
  2. Sprinkle in the Cajun seasoning, smoked paprika, salt, pepper, and crushed red pepper flakes.
  3. Stir well so that every bite of cabbage gets coated in those rich spices.

Step 4: Add Liquids and Simmer

  1. Return the sausage to the skillet.
  2. Add the diced tomatoes (with their juices), tomato paste, chicken broth, and Worcestershire sauce.
  3. Stir everything together, bring to a simmer, then reduce the heat to low.
  4. Cover and cook for 20–25 minutes, stirring occasionally, until the cabbage is tender and the flavors have melded beautifully.
  5. Note: If you prefer a saucier jambalaya, add an extra splash of chicken broth. For a thicker texture, let it simmer uncovered for the last few minutes.

Step 5: Taste and Finish

  • Taste the jambalaya and adjust seasonings — add more Cajun spice, salt, or a squeeze of lemon juice for brightness.
  • Sprinkle with fresh parsley or green onions for a pop of color before serving.
